- Empezamos haciendo las crepes. Ponemos en un bol todos los ingredientes excepto el perejil, y batimos bien con la batidora, añadimos el perejil bien picado y mezclamos, dejamos en la nevera mientras vamos haciendo el resto.
- Ponemos una cacerola con agua al fuego y cuando empiece a hervir añadimos sal, media cebolla, 2 hojas de laurel, 3 dientes de ajo sin pelar y la pechuga de pollo y cocemos unos 15 minutos. Cuando esté sacamos la pechuga y reservamos.
- Empezamos con el relleno: Picamos bien pequeñita 1 cebolla y media, grandecitas, los 3 dientes de ajo y los champiñones. Ponemos a pochar en una sartén con un poco de aceite de oliva, la cebolla y el ajo, salamos, después de unos 10 minutos, añadimos los champiñones, sal, pimienta y tomillo y cocinamos hasta que pierda el agua.
- Troceamos la pechuga que teníamos reservada, en trozos pequeños y añadimos a los champiñones, cocinamos 2-4 minutos y reservamos.
- Hacemos la bechamel: Ponemos la mantequilla en un cazo, cuando se derrita añadimos la harina y cocinamos 1 minuto, añadimos la leche, sal, pimienta y nuez moscada y movemos con unas varillas hasta que empiece a hervir y espese. Reservamos.
- Hacemos las crepes: Engrasamos la sartén con un poco de aceite o mantequilla y echamos un cacito de la masa, la extendemos por toda la sartén, damos la vuelta cuando empiecen a salir las burbujas y cocinamos por el otro lado, las vamos reservando. (A mí me salieron 6)
- Vamos rellenando las crpees con el relleno y las envolvemos y las vamos poniendo en una bandeja de horno, vertemos la bechamel por encima, añadimos queso rallado y gratinamos unos minutos y listo!
